To highlight the organoleptic characteristics of our grapes, we have equipped our cellar with the most modern and performing machinery such as: sorting table for bunches and grapes, vacuum system press with side cooling jackets and automatic saturation system with inert gas, single screw pumps for gentle and constant product transfer, pneumatic fulling system with low impact striker, truncated cone shaped vat in oak for the fermentation process, conditioning plant for temperature control of the fermentation tanks, automatic saturation system with inert gas for all the tanks.
The quality of the grapes, the available technology, the scrupulous selection of yeast and other oenology products, the careful compliance with the procedures dictated by the oenologist, the many and continue chemical and sensory analysis combined with the time and the passion of the workers, allow us to bring into the bottles wines that are characterized for their elegance, smell, aroma, persistence and balance.
