The cultivation phases (pruning, tying, airing, trimming, leaf removal) are made to obtain a perfect airing of the foliage and to optimise the ratio between the leaf surface and the bunches. A strong attention is given to the thinning out of the bunches, such operation is aimed to obtain a max production of 7 / 8 tons/hectare assuring in this way a perfect balance between the greenery and the fruits. All the above operations allow us to obtain grapes with optimal concentration of sugar and aromatic elements. A few weeks before the harvest, we make periodical monitoring of the grapes with the purpose to define the ‘ripening curve’ on which are confronted the sugar degree and the total acidity of the grape juicy.
The harvest is than made by hands and to avoid the bruise, the bunches are carefully arranged in small cases.
