GRAPE HARVEST:
a selection of our aromatic grapes, handpicked and carefully kept in small crates, withered at the sun for 3 months. Early harvest to preserve the perfect shape of the grapes and to have an high value of acidity, both conditions are indispensable for a long withering.
WINE MAKING PROCESS:
in the second half of November by pressing the grapes with a traditional screw press, the fermentation of the dense juice happens in small oak barrels and is very slow, the ageing is made in new smoked oak barrels.
SENSORY EVALUATION:
after a silent aging of at least 6 months in bottle, the wine shows a red-orange color with ruby tones; the main descriptor is the sweet taste with hints of caramel, almond and Mediterranean spices. In mouth is warm, long, strong body and sweet velvet at the same time.
SERVING SUGGESTIONS:
excellent wit all cheese with medium and long seasoning; superb with everything that is sweet, specially dry biscuits with almonds and hazelnuts. Also excellent as alternative to the spirits for elaborate desserts, for leisure to meditate, for the taste of harmony. Also to try with plain chocolate not higher than 75%.
