WINE MAKING PROCESS:
grapes selection on a proper sorting table, stalk removal and fermentation on big wooden vats (French oak) with temperature control, selected yeasts and
maceration period of 18/20 days.
MATURATION:
for 12 months in steel tanks .
BOTTLING:
sterile at low temperature with inert saturation of the bottle neck, ulterior aging of 4 months in bottle.
SENSORY EVALUATION:
red purple.
Fresh and fragrant wine with floral aroma like rose and violets and hints of sweet spices and exotic fruits. The taste is soft and rich with mellow tannins. Good structure and persistence.
SERVING SUGGESTIONS:
game, pasta al forno, roasted meats, fish soups, cured pork, cheese.
To be served at a temperature of 16 – 18 °C
