APPELLATION:

HARVEST PERIOD:

a little late

GRAPE VARIETY:

85% Sangiovese, 15% Alicante

WINE MAKING PROCESS:

gapes selection on a proper sorting table, stalk removal and fermentation on big wooden vats (French oak) with temperature control, selected yeasts and maceration period of 20/25 days.

MATURATION:

seasoning of the 50% in steel tanks and 50% in barriques for at least 12 months

BOTTLING:

sterile at low temperature with inert saturation of the bottle neck, ulterior aging of 12 months in bottle.

SENSORY EVALUATION:

red rubin.

Voluminous and well structured wine with bristled tannins and complex fragrances like sour black cherry jam, coffee, sweet spices, wet leather. Very good persistence.

SERVING SUGGESTIONS:

game, pasta al forno, grilled meats, tagliata, cured pork, aged cheese.

To be served at a temperature of 18 – 20 °C
