APPELLATION:
Sparkling wine brut extra dry
HARVEST PERIOD:

GRAPE VARIETY:
85% Sangiovese, 15% Lacrima and Aleatico.
WINE MAKING PROCESS:
white vinification system, soft pressing, clarification obtained with flotation treatment, thermo controlled fermentation at 14 °C, all the process is made under controlled atmosphere (no oxygen). The pink color is given adding wine obtained with the carbonic maceration of the Sangiovese grapes.
PRISE DE MOUSSE:
in the spring following the grape harvest, the wine undergoes second fermentation in stainless steel tanks using the Charmat method with 6 months yeasts contact period.
Ageing for 2 months in bottle.
SENSORY EVALUATION:
strong pink.
bright intense pink color, refined and persistent perlage, elegant and harmonic perfume with scents of white flowers and red rose, fruity aroma as well as hints of apple and strawberry.
The flavor is dry, sapid, fresh and mellow. Persistent after taste.
SERVING SUGGESTIONS:
perfect for aperitif and good compliment to many light courses such as row fish, vegetables, pasta with light sauces. To be served at 8 to 10 °C.
